This dish can be eaten as a main course, with a crisp lettuce and crunchy bread, or also as spicy side dish served at a vegan barbeque. No matter, whom you serve it, this couscous salad knows how to impress!

Preparation Time: approx. 20 min

Heat the olive oil in a pan and sauté the onions and garlic until the onions are translucent. Add the Höllenkrainer and cook on medium heat for about 5-6 minutes.

Add the tomato paste, water, vinegar, beans, tomatoes, cumin, cayenne and salt and simmer until the tomatoes are cooked.

In the meantime, bring the vegetable broth to a boil, stir in the couscous and remove from heat. With the lid on let the couscous soak up the liquid for a few minutes. Fluff with a fork and then add to the pan with the rest of the ingredients.

Stir well and season to taste with salt and fresh cilantro.
