Cook pasta al dente according to package. Heat oil in a pan and at high heat, cook the chorizo. Add the onions, garlic and zucchini, cook until they are almost tender, then add one of the tomatoes and sauté until the vegetables are tender. Remove from heat and stir in the water, nutritional yeast, paprika, salt and pepper. Pour over the pasta and mix well. Fold in the second tomato and let sit for a few minutes. Serve on plates, decorated with fresh cilantro or parsley.
